For the base, mix together the hemp powder, almond meal and raw cacao powder until well combined. Now add the sweetener of choice, coconut oil, MCT oil, vanilla bean and nut butter. Stir well to combine into a thick paste.
Press this mixture into a cake or brownie tin covered with parchment paper and place in the fridge to firm up. Now get onto the chocolate layer.
Over low heat, gently melt down your raw cacao butter and once liquid, stir in your raw cacao powder. Stir or whisk to incorporate and remove from the heat. Add your sweetener of choice, hemp seeds and macadamia nuts, and stir well to combine.
Pour this mixture over your base layer, sprinkle with raw cacao nibs and set in the freezer for 20 minutes or until form enough to slice and enjoy.
Store in an airtight container in the fridge or freezer. Please note, for Keto you need to use the green leaf stevia as the sweetener. The smart carb paleo approach can use maple syrup, honey or coconut sugar.
