Mexican Mince Fajitas

You are going to love these Mexican Mince Fajitas from my Luke Hines 10 Online Program! Think zesty guacamole, lime and cabbage slaw, fresh salsa and vibrant herbs all topped with my spicy turmeric mince, all wrapped up between my 3 ingredient gluten and grain free tortillas. Give a generous squeeze of fresh lime juice and you’re good to go amigo! If you’re looking for quick and easy, this recipe celebrates one of my favourite cuts of meat, the humble beef mince, put together in less than 15 minutes.

  • Ingredients

    Serves 4

    For the Turmeric Mince
    600g Australian Beef Mince
    1 brown onion
    1 garlic clove
    1 long red chilli
    1 teaspoon turmeric powder
    1 teaspoon ground cumin
    1 teaspoon ground coriander 
    Pinch of salt
    Coconut oil for frying

    For the GF Home Made Coconut Soft Tortillas
    1 cup almond meal
    1 cup arrowroot/ tapioca flour
    1/2 cup canned coconut milk
    1/2 cup water
    Pinch of salt
    Coconut oil for frying

    All the Trimmings
    Fresh salad greens
    Roughly chopped coriander
    Smashed avocado
    Fresh chopped salsa (I used cherry tomatoes and baby cucumbers for mine)
    Shredded red cabbage
    Fermented vegetables, to serve
    Lime juice, to drizzle
    Salt and cracked pepper to season

  • Method

    Heat your frypan with the coconut oil over a medium to high heat. Add your onion, garlic and chilli, and sauté for 2-3 minutes until softened and caramelised. This brings out the delicious flavour. Now add in your Australia Beef Mince and stir with a wooden spoon, breaking the mince up, to brown it well all over. Once your beef is no longer pink, add your ground turmeric, cumin and coriander, season well with salt and stir to combine. Remove from heat and set aside. 

    For the GF Home Made Coconut Tortillas, combine the almond meal, tapioca flour, coconut milk and water, season well with salt and mix well to create a lovely smooth batter. Heat your coconut oil in a clean fry-pan and add a quarter of the batter, swirling the pan to get good even coverage in the pan. Cook on high for 2-3 minutes or until golden brown and firm enough to flip carefully. Remove from the pan and repeat with remaining batter, re-greasing the pan each time. Set aside and get onto your trimmings. 

    Prepare your preferred sides, dress them with fresh lime juice, extra virgin olive oil and season well. You can utilise leftovers or use my suggestions above. The key is keeping it fresh and simple.

    Serve all of your elements on a plate, wrap the delicious flavours up in your home made soft tortillas and enjoy.

Bangin' Beef Burgers

You are going to love this Bangin’ Beef Burger with Crispy Sweet Potato Chips! Think a moist, juicy and flavoursome patty bursting with onion, garlic, chilli and cumin, served with fresh avo, ripe tomatoes, spicy kraut and mustard, all wrapped up with a lettuce bun, with a side serve of crispy salty chippies. If you’re looking for quick and easy, this recipe celebrates simple delicious ingredients put together in less than 30 minutes from fridge to plate, you know you wanna cook this one.

  • Ingredients

    Makes 4 

    For the Beef Patty
    600 grams Australia Beef Mince
    1 red onion, finely diced
    2 garlic cloves, finely diced
    1 tablespoon sesame seeds
    1 teaspoon ground cumin
    1 teaspoon dried chilli flakes
    Coconut oil, fry frying

    For the Chips
    2 large sweet potatoes, sliced into discs
    1 tablespoon coconut oil, for roasting 
    Salt, to season

    Trimmings
    Avocado
    Tomato
    Salad greens
    Fermented vegetables
    Mustards and sauces
    Salt and pepper to season

  • Method

    Get started baby pre-heating your oven to 200C and line a baking tray with baking paper. 

    Place your sliced potato on the prepared baking tray and coat well with the coconut oil and season well with salt. Place in the oven and bake for 25 to 30 minutes, turning half way, so they are lovely and crispy and golden brown. 

    Meanwhile, for the burger patty, in a bowl combine the Australian Beef Mince with the red onion, garlic, dried chilli flakes, sesame seeds and cumin. Use your hands to mix well, then roll into four equal sized burger patties. 

    Heat your oil in a fry pan over medium heat and cook your patty, starting with 4-5 minutes on the first side, flipping, and continuing to cook until both sides are golden brown and the mince is cooked through to your liking. 

    Remove the chips from the oven, serve them alongside your burger and add all the trimmings including a fresh crispy lettuce bun, smooth and creamy avocado, vibrant tomatoes and fermented vegetables for good measure. Season well with salt and pepper and you're good to enjoy!
