In a food processor, add the coconut butter, melted raw cacao butter, shredded coconut, melted coconut oil, MCT Keto Tonic, vanilla bean, and green leaf stevia (to taste). Blitz to combine well, you want it to be smooth with a little texture from the shredded coconut still.
For the white layer, spoon half of the mixture in a baking tray, brownie pan or square cake tin. Use the back of your spoon to spread into an even layer. Set in the fridge or freezer until firm, 20 to 30 minutes.
For the chocolate layer, add the raw cacao powder to the remaining mixture in the food processor and give a good blitz to combine and incorporate well.
Once your white layer is set, spoon the chocolate layer on top, smooth out to make it even with the back of your spoon, and return to the fridge or freezer to set until firm.
Enjoy a small square as a snack, or a slightly larger serve for a high fat low carb meal replacement on the go. Want more to have on hand? Make double or triple the quantities and you'll be set for a few weeks. Please store in the freezer.
