Green Goddess Omelette

Quick, easy and delicious recipe for any time of day

This has got to be one of the easiest and most delicious ways to get a generous dose of your daily greens that I know you will love. I have used spinach in this version, but any delicious greens will work wonderfully such as kale, silverbeet or a handful of fresh and vibrant herbs. 

The avocado will keep you feeling fuller for longer and provide a great source of Omega 3's. This recipe goes perfectly with a side of free-range nitrate free bacon or smoked salmon.

  • Ingredients

    3 free-range eggs whisked
    1 cup(s) baby spinach washed
    1/4 teaspoon(s) dried chilli flakes optional
    1/2 tablespoon(s) coconut oil for frying
    1/4 avocado sliced
    1/2 cup(s) baby rocket to serve
    1 tablespoon(s) extra-virgin olive oil to drizzle
    pinch of salt to season
    pepper to season

  • Method

    In a bowl, combine your eggs, baby spinach and dried chilli flakes. Using a stick blender or food processor, combine the three until well combined and your mixture is runny and green.

    Heat a fry pan over medium heat and melt your coconut oil ready for frying. Pour in your goddess mixture and fry until firm enough to fold. Continue to cook for 2 to 3 minutes or until completely cooked through. Remove from the pan onto your serving plate.

    Dress your baby rocket with the extra-virgin olive oil and lemon juice, and serve on top of your green goddess omelette, a slice of avocado and season well with salt and pepper, enjoy!
