In a bowl, combine your eggs, baby spinach and dried chilli flakes. Using a stick blender or food processor, combine the three until well combined and your mixture is runny and green.
Heat a fry pan over medium heat and melt your coconut oil ready for frying. Pour in your goddess mixture and fry until firm enough to fold. Continue to cook for 2 to 3 minutes or until completely cooked through. Remove from the pan onto your serving plate.
Dress your baby rocket with the extra-virgin olive oil and lemon juice, and serve on top of your green goddess omelette, a slice of avocado and season well with salt and pepper, enjoy!
